Been using evolution and loving it for sometime, Have been curious, but
never asked  That grayed area to right Normal and left of left
justifies, what must I do to get access to that. Excuse the non
technical description please. The only thing I miss about windows is
using word and its amenities to send mail and this has some of thar.

It sounds like you're writing your emails in plain text mode.  Switch to
HTML mode to activate the formatting options (Format -> HTML).

There's an option in Composer Preferences named "Format messages in
HTML" which will switch you to HTML mode automatically when composing
emails, but please refrain from sending HTML mail to any mailing lists.
Including this one.

Change the format to 'HTML' and they will become active.

One of the abominations of email on Windows is the ability to use word
to create emails - it produces non-standard text that is difficult to
read on non-MS clients.  Don't do it!
