News to me we need to worry about coyotes (other than food storage
normal handling rules).

sort of why last spring when i did a short solo, i carried a .380.  not so much coyotes, but there are getting to be more coydogs in the area.

Do you think having something like bear spray or pepper spray would have been effective in preventing this attack?

I would think the issue would be how big is the pack?  How do packs attack,
from a semi-circle, layered semi-circle ranks?  All at once, staggered?
From down-wind, up-wind?  It's one thing when it's one bear, another thing
when it's 8 coyotes coming at you 4 at a time, each from a different compass
point, and each backed up by a 2nd coyote.  I would personally think you'd
quickly run out of spray.  Of course if that is all you have, you'd want to
use it.  I'm no expert, the closest I've come to coyotes is at the MN Zoo
and solid glass separated them from us.

Guess that why I used to carry an ice ax as a walking stick. If am going down, it won't be without a fight. I wonder what time of year this was and what was the food source for the coyotes during this time.

Likely not very effective. Coyotes are cowards, basically.
They will attack from behind you. I have seen my grandfather
grab his 30-06 and kill one while they harassed a cow. I stood
and watched from an embankment about 120 yards away.
A few would weave in front...making threats, but not really
attacking. The ones in the rear of the animal would dart in
and bite on the rear legs...looking to hamstring her, I think.
They were quite focused...and he got pretty close, within 50
yards.  He got the one in the rump, the others jumped and
started running off.  Two or three stopped but started running
again when he finished off the wounded one.  
        This was in the Catskills of New York.
        He called a vet for the cow.... hmmm....I believe he was
a bit worried about rabies...
        My thoughts only . . .

Without any intention of disrespect for the victim etc....but

Cowardice is a human definition isn't it?
I mean they prevent injury while getting results (food)...  but this will
probably go way off topic then

I have a bad ferrel dog problem in the sections of the North Country/
Buckeye Trail that I am a maintainer on. It didn't just start I have used
that area for 30 years and it has always been a concern there ! Well
intentioned or lazy folks won't take a dog to the pound they just turn it
loose and think it will fend just fine for itself ! It makes someone else
have to "take care" of the problem animal !
