When using the datepicker, it has November 1st for the Sunday and
Monday in November therefore my dates are getting off by 1 day.
Anybody else with this issue?

Can you tell us which version of jQuery and UI you are using?  I am
not having this problem nor is the demo site.  It would be helpful if
you could replicate the issue on a site such as jsbin.
