How can I measure the count of rss subscribers of our blog - something like
GoogleAnalytics for a website?

Personally I use http://feedburner.google.com, I'm sure there are others.

I want to explain in more details: if I understood it correctly, measurement
tools work that way, that instead of giving the real RSS URL to your blog
readers you are using one from your measurement provider, so they can
measure all accesses. How do I have to change my pebble configuration to use
such a measurement-RSS-URL instead of the original one?

It is true that you give out a FeedBurner URL in place of the real URL
(i.e. http://feeds.feedburner.com/wyattsblog in place of
http://blog.wylovan.com/pebble/wyatt/rss.xml).

As far as integration, I don't have an ideal solution...  You'll need to
modify page.tag, subscriptions.tag (and maybe responseLinks.jspf) to
point to the FeedBurner URLs.  Really, it ought to be configuration
option w/ modifications to page.tag, subscriptions.tag and
responseLinks.jspf, but this would require a little more time...

I personally never made the change to responseLinks.jspf - this would
require setting up many feeds in FeedBurner.  I took a cursory look at
FeedBurner's API, but didn't see any promising methods of adding these
programatically - maybe this is what they allude to by the "Feed
Management API"
(http://code.google.com/apis/feedburner/developers_guide.html)...

Hopefully that gives you some direction.
