Monitoring traffic to/from given host

I must have misread the use of the --host parameter .. it's meant to
split entries based on the HOST doing the LOGGING, correct? This has no
effect on the mail recipient/sender? So if I want to monitor mail
to/from a given host, like "webbplatsen*", I cannot do that with the
--host switch, correct?

How do I do this?
