I like to have nice current DB structures printed and taped up on my wall.

WHere did they hide the print structure feature in v11?

nowhere

there was "TechTip 75745: Printing your structure using SVG"
<http://kb.4d.com/search/assetid=75745>
besides named "Printing your structure using SVG" it doesn't print.
But that's easy to achieve as described here <http://dddd.mettre.de/a2d.shtml

Silver Surfer,

I have recently done one by manually screen grabbing the structure window,
scrolling and grabbing again and then pasting all the images together. Not
as easy as the old feature I admit.

its easy to achieve if you speak German. The google translator does a  
poor(or should i say hilarious) job with irony and comedy..so it ends  
up sounding like an old Swiss German I met in Basle who gave me guided  
and detailed tour of that city..except he spoke no english and i could  
only manage 'zwei hamburger mit casse bitte' and a few other phrases.
(its all in the detail!)

Alternatively, export a DTD describing the tables, fields and relations from 4D and open in a DB modeling tool. Or even MS SQL Server Management Studio. Lots of options for pretty printing.

a helpful hint- to implement Ortwin's method

in the form editor, create a rectangle that is  the size of the
printable area of a page.
copy it, paste it into the structure

Then you can align your tables etc, and do the screen capture -
(command + shift + 4 -- to get a cursor so you can select the capture
area)

Is this the right one and which Method to call?

its designed as a component but will work as a standalone too.
just open the structure and a dialog will popup via startup.
