You can get away with play with dynamics a bit when you record, but everything else feels pretty un-musical when you record to make sheet music. That is the crux of the problem. How do you play so the computer knows if you meant to play a quarter note, and eight note with an eighth rest, or was that suppose to be a staccato quarter note? Hmmm....
