Well, you can do something like this:
InputStream is = response.getEntity().getContent();
Document doc = DocumentBuilderFactory.newDocumentBuilder().parse(is);
and then use the DOM API to do stuff with the doc.
Have a look at the javax.xml.parsers and javax.xml.xpath packages.
