I have the same issues even with moderately normal mobility. I started carrying along a small bean bag on hikes etc. There is almost always something to rest it on or against. I always wanted one of those tree spike screws with the camera head but I didn't buy it before they were pulled from the shelves.

After reading Alan's comments about invisible camera support and my tendency
to not use tripods when I should, I took a hard look at what I was using for
tripods, with an eye to determining why I habitually leave them in the car.
The lightest tripod I had is a Monfrotto 055, which while not classified as
a heavy, is certainly no lightweight either, and as I now seem to be
perpetually hobbled by cartilage and ligament problems in my knee, I suspect
that I'm not carrying because of the weight.
So, I decided to look around at what's out there in smallish carbon fibre
tripods, especially the ones from Feisol, which seem to be getting very good
press, and are relatively inexpensive compared to what they are knocking off
from (Gitzo).
I ended up with a Feisol Tournament tripod and their CB-50 ballhead, for a
total weight of 1.6kg.
This is about half the weight of my 055 and head, so hopefully I'll be more
inclined to take it out of the car.
If anyone wants a good deal on a used tripod, I have the following for sale:
Manfrotto 055 legs with 155 head.
Manfrotto 029 Triman (no head).
Both are in good but used condition. Buyers local to Regina would be
preferred because of the cost of shipping something this heavy (especially
the 029, which is a bit of a horse).
