I don't install apps very often, so I currently can't think of an example off hand. Though I do know I've run into dialogs in the past that pop up on opening an app for the first time that ask if I'd like to use this software for all files of this type. How to implement such a feature is achieved, unfortunately, is beyond me.

Like I said before, this isn't really a deal, and took very little effort to fix. The only reason I brought this up is that I could see how a situation like this could be frustrating to those who don't know how to revert file associations back to their previous state.

installed that claims a particular file type is the one that is
associated with that file type. It seems kind of annoying at times but
the assumption is that you installed a new app capable of handling a
particular file type, so you must want that app to be associated with
that type. You can use the Finder's info dialog to tell the system to
use a different application for a single file or all files of a type.
