This is really just standard Mac behavior. The last application
installed that claims a particular file type is the one that is
associated with that file type. It seems kind of annoying at times but
the assumption is that you installed a new app capable of handling a
particular file type, so you must want that app to be associated with
that type. You can use the Finder's info dialog to tell the system to
use a different application for a single file or all files of a type.
