Adding a line to set the viewer preferences like this:
PdfWriter writer = PdfWriter.getInstance(doc, os);
writer.setViewerPreferences(PdfWriter.printScalingNone);
will tell Adobe Reader the document shouldn't be 'fit to paper'.
