You need to change this in the options file. I had a quick look at the
Ubuntu packages, but I couldn't find where they have put it. You might
need to read the documentation they include with the package to find
how they are expecting you to set options.

Sure, just use 't' followed by one of the letters from the pad you so
carefully transcribed above. You can toggle the setting of the keypad
mode and use numbers instead of letters which some people find easier;
but be aware that this is really inconvenient on laptops. (We use eight
keys because there are eight directions. It takes a bit of getting used
to, but you will loose many turns if you only move and fight
orthogonally.)
