Can anyone help me identify what the compatibility trouble is in
technical terms?

I can't seem to find verification of this issue described here

yeah, they are running Exchange.  That is the problem.

Do you know what version of Exchange server they have?  From what the
press has said about SL this week, you have to be running a specific
version (2007 or something -- I am not a MS wuss nor have I been
running a pre release of SL but there were some notes in some of the
press articles this week about it).

MS Exchange 2007 the specific version that Apple claims compatibility
with:
  http://www.apple.com/macosx/exchange/

Being a Microsoft product*, all bets are off as to whether any other
MS Exchange product will be compatible with Snow Leopard.

Alex

*Not MS-bashing intentionally. Just ask the Samba Team about how much
fun it is to maintain compatibility between versions of Microsoft
products (including between a GM and SP1 version of an operating
system).
