Waterfall plots in Octave/Gnuplot

Hi, just wondering if anyone here has created Waterfall plots in Octave/Gnulab. If so, what kind of performance did you get?

-What frequency spectrum did you plot?
-How many "slices" did you plot?
-What resolution on the frequency axis did you use?
-How long did each plot take?
