By default, each syllable is centered to the corresponding note (with a
few exceptions, like when you have a melisma). When using the trick
described in the manual, LilyPond will treat the multiple syllables as a
single long syllable, which then is centered to the note head. In these
situations, you could change the alignment using
\override LyricText #'self-alignment-X = #LEFT
